- Yes you can virtualize the OS but the EULA is rather explicit in that even virtualized it will need to be running on Apple hardware
- THe most important thing about hardware is on the HCL - http://www.vmware.com/resources/compatibility/search.php
- Whether ESXi ( this is the vSphere product that creates the virtual environment) will depend on whether it is on the HCL referenced above - the storage is virtualized so the virtual machine is not aware that its information is installed on a SAN -
